Artichoke Salad (Makes 4 to 6 servings):
- 4 cups mixed salad greens.
- 1/2 red onion, sliced.
- 1 packet Verde Artichoke Hearts.
- 1/2 cup vegetable oil.
- 1/2 cup vinegar.
- 1 teaspoon salt.
- 1 teaspoon black pepper.
- 1 teaspoon garlic powder.
- 3 tablespoons grated Parmesan cheese.
- In a large bowl, combine the mixed greens, onion, and Verde Artichoke Hearts
- In a bowl, mix together the oil, vinegar, salt, pepper, and garlic-
- Pour enough dressing over salad to coat, and mix well.
- Sprinkle with grated cheese, and serve.
