Artichoke Salad (Makes 4 to 6 servings):

  • 4 cups mixed salad greens.
  • 1/2 red onion, sliced.
  • 1 packet Verde Artichoke Hearts.
  • 1/2 cup vegetable oil.
  • 1/2 cup vinegar.
  • 1 teaspoon salt.
  • 1 teaspoon black pepper.
  • 1 teaspoon garlic powder.
  • 3 tablespoons grated Parmesan cheese.

  • In a large bowl, combine the mixed greens, onion, and Verde Artichoke Hearts
  • In a bowl, mix together the oil, vinegar, salt, pepper, and garlic-
  • Pour enough dressing over salad to coat, and mix well.
  • Sprinkle with grated cheese, and serve.
