Stuffed Artichoke Bottoms (Makes 10 stuffed artichoke Bottoms):

  • 1/2 cup butter.
  • 1 cup grated Parmesan cheese.
  • 1 packet Verde artichoke bottoms.
  • 1 teaspoon pepper.
  • 1 teaspoon salt.
  • 250 grams cream cheese.
  • 1 tablespoon sour cream.
  • 2 tablespoons chopped fresh chives.

  • Pre-heat an oven to 165 degrees C
  • Melt the butter in a small pot over low heat; remove from heat and set aside.
  • Sprinkle Verde artichoke bottoms with pepper and salt.
  • Combine the cream cheese, sour cream, and chives in a bowl, and mix well.
  • Spoon about 1 tablespoon of the filling into each artichoke bottom.
  • Dip each stuffed artichoke bottom into the melted butter, roll in Parmesan cheese, and place into the baking dish.
  • Bake about 45 minutes in the oven, until the tops of the artichokes are golden brown.
