Stuffed Artichoke Bottoms (Makes 10 stuffed artichoke Bottoms):
- 1/2 cup butter.
- 1 cup grated Parmesan cheese.
- 1 packet Verde artichoke bottoms.
- 1 teaspoon pepper.
- 1 teaspoon salt.
- 250 grams cream cheese.
- 1 tablespoon sour cream.
- 2 tablespoons chopped fresh chives.
- Pre-heat an oven to 165 degrees C
- Melt the butter in a small pot over low heat; remove from heat and set aside.
- Sprinkle Verde artichoke bottoms with pepper and salt.
- Combine the cream cheese, sour cream, and chives in a bowl, and mix well.
- Spoon about 1 tablespoon of the filling into each artichoke bottom.
- Dip each stuffed artichoke bottom into the melted butter, roll in Parmesan cheese, and place into the baking dish.
- Bake about 45 minutes in the oven, until the tops of the artichokes are golden brown.
