Rice and Pea Pilaf (Makes 4 servings):

  • 2 tablespoons vegetable oil.
  • 4 to 5 whole garlic cloves.
  • 1 stick cinnamon.
  • 4 small green chilies.
  • 2 medium onions sliced thin.
  • 2 cups rice.
  • 1 cup Verde frozen green peas.
  • 1 1/2 teaspoon cumin powder.
  • 5 cups water.
  • Salt.

  • Heat oil in a medium pot over medium-high heat-
  • Add garlic cloves and cinnamon and cook about 20 seconds.
  • Add chilies and onions and cook, stirring frequently, until golden brown, 6 to 8 minutes.
  • Add rice and cook, stirring frequently about 2 min.
  • Add Verde peas and cumin powder and cook, stirring constantly for 1 minute.
  • Add water and salt bring to a boil and reduce to lowest heat.
  • Cover with lid and allow to cook till all the water is absorbed, about 10-12 minutes.
  • Serve hot.
