Rice and Pea Pilaf (Makes 4 servings):
- 2 tablespoons vegetable oil.
- 4 to 5 whole garlic cloves.
- 1 stick cinnamon.
- 4 small green chilies.
- 2 medium onions sliced thin.
- 2 cups rice.
- 1 cup Verde frozen green peas.
- 1 1/2 teaspoon cumin powder.
- 5 cups water.
- Salt.
- Heat oil in a medium pot over medium-high heat-
- Add garlic cloves and cinnamon and cook about 20 seconds.
- Add chilies and onions and cook, stirring frequently, until golden brown, 6 to 8 minutes.
- Add rice and cook, stirring frequently about 2 min.
- Add Verde peas and cumin powder and cook, stirring constantly for 1 minute.
- Add water and salt bring to a boil and reduce to lowest heat.
- Cover with lid and allow to cook till all the water is absorbed, about 10-12 minutes.
- Serve hot.
